2 Vegetable stock cubes
1 large onion
broccoli
spring onions
brown sauce
flour
cheese slices or grated cheese
pepper salt
butter
Bring to the boil your stock adding all the chopped vegetables, mashing as they soften. When soup has arround half hour left add a tiny knob of butter and sieve a small cup of flour. Add the cheese and mash continuesly so the flour does not clump. Add the salt, pepper and sauce as desired taiste.
Whenever i make a new soup i never tell anyone what is in it, if i did then my fussy family would turn their noses up, so i wait until they have ate it all and they are pleasantly surprised.

Cheese and Broccoli
Country Vegetable Soup
You will need
2 veg stock cube
salt
pepper
6 carrots peeled and chopped
2 onions chopped
handfull of broccoli florets
2 leeks chopped
Bring to the boil a pan of water adding the stock cubes,salt,pepper This is your soup stock
Add the onions,broccoli,carrot and leeks cover and simmer for approx 2hrs.
Whilst soup is simmering mash occasionaly as the veg is softening
If more salt is needed add as taiste requires.
Blend or Mash
No fancy tools needed for these soups just a big pan, big spoon and a blender or masher.
I prefer to mash my soups as the ingrediants begin to congeal and soften in the pan, one reason being that i can't be bothered to wash the blender afterwards and secondly i prefer my soups chunky but you substitute the hand held potatoe masher for a blender if you like, depends how you like your soups.
